Professions while like a job are meant to be fun. I just can't see making a ton of cash, and a profession at 70. Doesn't seem right to me. I don't RP, I'm on a
normal server. But at some point a little realism (fantasy realism lol) does come into play for me.
I like the satisfaction of working a profession up from the roots. Doing it without massive amounts of cash (though I have had other chars make things for my enchanter to speed things along).
In most cases
I try to avoid buying supplies, and gather everything. Though for my warlock tailor I just wasn't getting enough cloth and had to buy some from the ah.
There's only so much farming I can do. Though now my leatherworking on my hunter is so high, I'm going to have to farm to max it at 375 . As I'm still saving money for epic flight training.
My shaman had 2 gathering professions at one time, but I changed him to an alchemist. Because I like the satisfaction of making things. I like it when people buy things I make on the ah. As I said, the game is supposed to be about fun. So choose something you'd like to do. Though I admit my druid has 2 gathering professions, as I have all the major professions locked down on horde side except jewelcrafting. But it's a pain shifting out of cat form to mine, so I chose skinning, and herbalism so I don't have to shift out.
I won't
say leatherworking is necessary. My hunter never realy benefitted from it. It always lagged behind his level, I could never make anything beneficial. So much gear seemed better for rogues.
Though professions are a headache, and do take some time. If you want to save time, just take 2 gathering and put them up on AH. But if you want satisfaction of making things for other people, choose something you'd enjoy making.

Life's too short to drink bad beerNever choose a profession combination based on what it will allow you to make. Choose it based on what it will allow you to earn. Most things can be bought. For those select end-game niceties that require you to have a profession to use (ie. engineering, etc.) you can always drop your least profession to fund the new one. Selecting professions on a new
toon based on what it will allow you to make 60-70 levels away is a fantastic way to stay broke. Selecting professions that don't generate any noteworthy income simply so you can make things that can be bought for a pittance is also a fantastic way to stay broke.-I tink I made an angry poo-poo!
